Brazilian Food
Sister
Whitfield invited over to her home to learn how to make Brazilian food. It was
really fun, and educational! So here are the recipes.
Brazilian Black Bean
Ingredients
• 1 teaspoon sea salt
• 1 sausage
• 1 onion, diced
• 2 cloves garlic, crushed
• 1 bag dried black beans, rinsed
• 5 cups water
• 1 Taco Seasoning Mix
• 1 Sazon Goya
• Black pepper
• Cilantro (2 or 3 stems)
Directions
1 Soak the beans overnight: Rise the
black beans. Put all the ingredients in the pressure cooker.
2 Pressure cook for 40 minutes with natural pressure release.
3 Taste, season and serve:
Carefully remove the lid on the pressure cooker - the steam will be hot. Taste
the beans for seasoning; it will need pepper, but probably not any more salt.
Brazilian Rice
Ingredients
• 4 cup basmati or jasmine
white rice
• 2 cloves garlic, crushed
• 8 cups water
• 1 T salt
• 1 Sazon Goya
• Oil
Directions
Wash the rice until the
water runs clear and set aside to dry. Chop the onions and garlic finely. Place
a pan over medium heat and add the olive oil. Once olive oil is heated add the
garlic until golden. Add the rice to the pan and stir for an additional 3-4
minutes making sure that the rice does not stick to the bottom of the pan. Add
the eight cups of water to the rice, seasoning, and the salt. Place a lid on
the pan and cook on medium heat for 8 minutes. Decrease the heat to low and
cook for another 10-15 minutes, or until the water has all evaporated. If the
rice is not cooked yet, add a little bit more water!
Brazilian Chicken
Ingredients
• 2 lbs. chicken (10 breast)
• 2-3 T oil
• 3-4 cloves garlic, crushed
• 1 onion
• 1 t salt
• 2 Sazon Goya
• Cilantro (5 or 6 stems)
• 1 ½ cups water
• 2 cups cream
Directions
Chop the onions and garlic
finely. Place a pan over medium heat and add the olive oil. Once olive oil is
heated add the garlic until golden. Add the chicken, cilantro, and spices. Continue
cooking until it is no longer pink. Add the water, and cook until half of the
water is gone. Add the cream, and cook on low for 4-5 minutes.
